Hospitality - Vegetarian and Vegan Cookery Skills
What is special about this course?
The Vegetarian and Vegan Cookery Skills course will allow you to develop your cookery skills. You will also enhance your knowledge about hygiene and health & safety in a kitchen environment.
With the increase in those opting for vegetarian or vegan diets, this course is a great way to gain new and relevant skills for commercial catering or simply cooking at home for friends and family.
This course is a mixture of practical and theory work. It will focus on skills, techniques and recipes that are suitable for vegetarian and vegan diets.
On completion of this short course, you will achieve a nationally recognised City & Guilds Level 2 units.
• The increase in the vegetarian and vegan sector means that this course offers a great starting point for any learner
• You can study flexibly part-time across the duration of 60 hours at the Hospitality and Tourism Academy
• You will learn relevant skills
• You will undertake hands-on practical training
Relevant SCQF Level 5 award.
Students with appropriate industrial experience will also be considered.
Links will be developed with the British Nutrition Foundation and Food Standards Agency who can assist with providing current and relevant information to learners.
Local producers will also supplement the delivery as guest speakers and places of interest to visit.
Core and essential skills will be developed as part of this course:
- Communication being in written form and verbal form as part of a team
- Numeracy with menu and recipe production
- IT as part of the assessment and portfolio submission
- Essential skills as part of a kitchen brigade (teamwork, timekeeping, problem solving and self-management)
No equipment or kit requirements.

Face-to-face. Delivered over 60 hours, in the Moray College UHI training kitchens and classrooms.

On successful completion of this course, you could go on to further study opportunities or enter the workplace as a trainee or commis chef.
