What is special about this course?
This City & Guilds course will include awards in both Cookery and Food & Beverage Service. The Units are delivered in fully equipped training kitchens, classrooms, or through work experience in the College’s Beechtree Restaurant. Students will have the opportunity to prepare, cook and serve food and beverages to the general public, college staff and students.
This course offers a fantastic introduction to the professional skills and knowledge required for a career in the Hospitality Industry and will also include a focus on providing suitable work experience opportunities for students.
Students will complete a comprehensive induction at the start of the year, which will prepare them for all aspects of the course. During this induction, students will undertake both a REHIS Elementary Food Hygiene and a World Host qualification.
3 National 4s, one of which must be English
satisfactory attainment of a SCQF Level 4 course.
Applications are encouraged from mature students who do not possess formal qualifications but have the skills to meet the academic demands of the course.

Health and safety awareness for catering and hospitality
Introduction to healthier foods and special diets
Prepare and cook food by boiling, poaching and steaming
Prepare and cook food by stewing and braising
Prepare and cook food by baking, roasting and grilling
Prepare and cook food by deep frying and shallow frying
Cold food preparation
Introduction to employability in the Catering and Hospitality Industry
Dealing with payments and bookings
Food and beverage service skills
Bar service skills
Hot beverage skills

What can I do on completion of my course?
Further study may include City and Guilds Level 2 Diploma in Professional Cookery or Level 2 Diploma in Professional Food and Beverage Service.
Students may also enter employment as a Commis Chef or waiter(ess).
